Moist chocolate cake

  1 cup cake flour ⅓  cup dark cocoa powder ¼ teaspoon salt ½ teaspoon baking soda 1 teaspoon baking powder ¼ cup unsalted butter, room temperature 1 cup sugar 1 egg, at room temperature 1 teaspoon vanilla extract ½ cup milk, room temperature ½ cup room temperature black coffee 1. Sieve the flour, cocoa powder, salt, baking soda and baking powder together.  2. Cream the butter and sugar in a bowl until fluffy and smooth.  3. Add the egg, vanilla extract, milk, and coffee, giving 1 minute of mixing between each.  4. Add the flour mixture into the bowl and mix until just incorporated, being careful not to overmix.  5. Butter the cake tin and pour in batter. Bake on middle rack at 375ºF for 25-30 minutes.  6. Transfer to a plate, and allow to cool completely before cutting. Adapted from Rumki's Golden Spoon .
